How to Cook

Clean and wash trotters thoroughly. Fry onions until deep golden, add trotters and Shan Paya Masala, and cook on high heat for 10 minutes. Add water, bring to a boil, then slow cook on low heat for 4–6 hours until the broth is silky and the meat is falling off the bone. Serve with naan or kulcha, fresh lemon, and green chillies.
